Razor Clams Galician Style

This is a fantastic dish for a starter, really quick and delicious.

Prep time: 5 minutes Cooking time: 1 minute Serves: 4

Ingredients 2 tablespoons virgin olive oil4 cloves garlic, finely chopped1 long red chilli, deseeded & finely chopped750g razor clams 1 tablespoon parsley finely chopped juice of 1 lemon


Heat a medium sized pan on high. Add olive oil, garlic, chilli, stir so the garlic doesn’t burn. Add razor clams and cook for about 1 minute, until clams have opened. Stir in parsley and lemon juice.

Serve with lemon wedges.
